Cinnamon is a valuable and aromatic spice obtained from the inner bark of certain trees of the genus Cinnamomum. Used for thousands of years, it is appreciated as much for its bewitching fragrance as for its culinary and medicinal virtues.
There are mainly two types of cinnamon:
- Ceylon cinnamon (Cinnamomum verum) is also called “true cinnamon”. It is soft, subtle and slightly sweet. It is considered to be the most refined.
- Chinese cinnamon or Cassia (Cinnamomum cassia). Darker, thicker and with a stronger taste, it is more common and often used in industrial products.
Cinnamon comes in several forms:
– Sticks shape : rolled rind, ideal for infusions or stews.
– Grind in powder: Convenient for baking, beverages, and spice blends.
– Essential oil: used in aromatherapy or cosmetics.
– Liquid extract: for culinary preparations or food supplements.
Culinary Uses
Cinnamon is a valuable and aromatic spice and versatile in cooking. You can use it on differents ways :
– For pastry : in apple pies, brioches, biscuits, cakes.
– added in beverages: Added to tea, coffee, hot chocolate or smoothies.
– added in savoury dishes: in tagines, curries, oriental sauces.
– and added also in preserves and compotes: to flavour cooked fruit.
