  • Green olives are used as a pickle during aperitif. You have to mix them with garlic, anchovies or pimientos. You can also use them in dished in sauces like to “ rabbit with olives”
  • Black olives can also be consumed during aperitif but also in salads and of course on pizzas as topping
  • Finally both green and black olives are the main ingredient of the famous “tapenade” (olive paste)
